Foods originated from animals are more nutritionally beneficial than plant-based foods and are the main source of protein essential for human growth and development. Animal Origin Food Science is based on academic knowledge and applicable technology of livestock that have been the basis for the supply of human protein, and is a scientific approach to the development, supply, and safety of high quality food to meet rapidly changing consumer needs.
The Animal Origin Food Science Laboratory conducts researches on the relationship between the quality of animal origin foods and various aspects of animal growth, storage and processing technology of muscle-based food, production of fermented products, production of bioactive proteins, application of egg constituents, safety assurance, and production of cell-cultured muscle foods. Students are educated to have international sense and skill in these branches.
